Breakfast
Granola
This is a simple breakfast which packs lots of protein and is heart healthy.
3 cups rolled oats
2 tablespoons of Stevia or Truvia
1 - 2 teaspoons of unsulphured Molasses
1/2 teaspoon of cinnamon
1/4 cup Macadamia oil or coconut oil
1 teaspoon of vanilla
1/2 cup of raisins or dried cherries *
1/4 cup of raw almonds *
1/4 cup cashews *
* You can use any kind of dreied fruit, nuts and seeds to your liking.
The Stevia or Truva and molasses replace brown sugar. Depending on how dark you desire the granola will depend on how much molasses you use. Many people like honey. I left it out because it gets too sweet and diabetic will have more issues. If you like honey then replace the sugar and molasses. I recommend using only one simple sugar.

Mix all ingredients in a bowl ro by hand.
Pre-heat the oven to 300°F. If you have a Saladmaster  electric skillet set that for 300°F and spray the skillet with a light dusting of Pam. If you use an oven place mixed ingredients on parchment paper.
Spread mixture in the eletric skillet on on the tray with parchment paper.
Cook in the oven of skillet for about 20-30 minutes stirring regularly to keep it from clumping together and in turns a golden brown.

After it turns golden brown take the granola out and let it cool for 20-30 minutes where it will harden.

Serve with your favorite milk (I prefer Original Unsweetened Almond Milk)
